Fish Express: fast-casual spin-off of Go Fish

DALLAS — Fish Express is the fast-casual offshoot of Go Fish, with a like-minded seafood-centric menu, but at a lower price and more casual environment. It lets you customize your order at the counter, a la Chipotle; like Pei-Wei, you order at the counter and they bring it to your table when it’s ready. Here is the place, finally, to get your seafood burger -- just like a regular burger, served on a wheat bun with seasoned shoestring fries -- but this patty’s made of chopped shrimp, salmon, and whitefish. Owner Mike Hoque had a rocky road after opening Go Fish when original chef Chris Svalesen departed. But Hoque has persevered in his passion for bringing fish to the people of Dallas, something they sorely need. The arrival of Fish Express at Preston & Forest makes it unofficially the healthiest intersection in the city, what with Snappy Salads, the upscale salad joint in the same center.
